Vietnamese Sweet & Sour Fish Sauce

1 ea Garlic cloves minced
3 tb Sugar
2 tb Lime juice fresh squeezed
1 tb Rice vinegar
1/2 c Warm water
6 tb Fish sauce a.k.a. nuoc ama
1/2 ts Red chili pepper ground
Mix garlic, sugar, citrus juice, water & fish sauce in a small bowl until the sugar is dissolved.
Stir in ground red chile pepper.
Use this as a dipping suace for seafood, poultry or as a unique salad dressing.
