Crab & Coconut Soup

Crab & Coconut Soup

Yield: 4 servings




2 ea cans coconut cream
2 ea cans cream of asparagus soup
3/4 c water
1 tb Golden curry powder
1 tb soy sauce
1 ts lime juice
3/4 lb fresh crab meat*
1/4 c evaprated milk
Salt & pepper
1 tb chives chopped

*NOTE: You may use canned crab meat but the taste will not be as impactive.

Combine your coconut cream, asparagus soup, water, evaporated milk, curry powder, soy sauce, & limw juice in a saucepan.
Bring to a low simmer while constantly stirring to combine.
Add your crab then return to a simmer.
Heat only until your crab is cooked through.
Season this soup with salt & pepper to taste.
Sprinkle with chives before serving.
